Shortbread Tea Cookies

These classic, thick and crumbly shortbread cookies start with a cake mix which provides buttery, slightly sweet characteristics that are irresistible.

Butter, unsalted, softened

Water, cool approx. 72°F

  1. Place cake mix, butter and water in mixer bowl with paddle attachment.
  2. Mix on low speed 3-4 minutes or until dough comes together, is smooth and well combined.
  3. Deposit dough using #40 scoop in 4x6 pattern onto greased or parchment-lined sheet pans.
  4. Place piece of parchment paper on top of cookies.
  5. Place another sheet pan on top of the parchment-lined cookies, and press down firmly and evenly to flatten cookies to approx. 1/2 inch thick.
  6. Bake as directed below and allow to cool before serving.
