Jalapeño Cheddar Toast - Prep
  1. Place frozen scones on parchment-lined sheet pan and bake as directed; cool completely.
  2. Cover and allow to dry out at least 8 hours or overnight.

Southwest Rice and Beans
  1. Fold together rice, beans, green onions, jalapeños, cilantro, cumin, paprika, salt and pepper in a large mixing bowl.
  2. Refrigerate until needed or heat to serve.
Jalapeño Cheddar Toast - Finishing
  1. Stand scones up on the long, flat edge; cut into 4 equal slices.
  2. Bake as directed until crispy and dried out.

Assembly
  1. Add 1 1/2 cups (9 oz) Southwest Beans and Rice to serving bowl.
  2. Top with 7 slices (3.5 oz) seared steak, 2 Tbsp (1.5 oz) chimichurri sauce and 9 roasted tomatoes (1 oz).
  3. Serve with 2 Jalapeño Cheddar Toast pieces.
