Olive oil and Italian seasoning delicately flavor fresh quick bread rounds that start with buttermilk pancake mix.

  1. Add eggs and oil to mixing bowl; mix using a wire whisk until combined.
  2. Place egg mixture and remaining ingredients into bowl of mixer fitted with an attachment; mix on medium speed for 2 minutes.
  3. Scrape down bowl and paddle; mix on medium speed for an additional minute.
  4. Deposit an equal amount of batter (approx. 1 lb 8 oz) into each of 8 sprayed and parchment-lined 8-inch round pans.
  5. Bake as directed below; allow loaves to cool 10 minutes in pans before turning out to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.

  • Tip: To use bread for sandwiches, slice each round in half from side to side to create a top and bottom; add sandwich fillings and cut into quarters for serving.
