Santa Fe Style Cornbread

Cornbread can stand on its own when it's packed with sauted veggies, jalapeños and bacon.

Pimientos, diced, drained

Cheddar cheese, shredded

  1. Sauté bacon until crisp; add bell peppers, onions and jalapeño peppers.
  2. Sauté 1 minute until softened.
  3. Prepare cornbread batter according to package instructions.
  4. Add bacon mixture and remaining ingredients to fully mixed batter; stir to blend.
  5. Deposit 7 lb 12 oz batter into each of 2 greased full steam table pans; bake as directed below.
