Parfait a whole new way! A savory snack or side layers Yoplait® Nonfat Plain Yogurt, diced roasted veggies and a cheesy, nutty Progresso™ Italian Bread Crumb granola.

Savory Granola
  1. Combine bread crumbs, sunflower seeds, pumpkin seeds, almonds, parmesan cheese, brown sugar, egg white and olive oil in large bowl; mix well with rubber spatula.
  2. Spread mixture on parchment-lined sheet pan; bake as directed below and allow to cool to room temperature.

*Rotate pans baked in convection oven one-half turn (180°) after 37 minutes of baking.
Assembly
  1. Combine yogurt and red pepper puree in small mixing bowl; stir until combined and set aside.
  2. Place 1/2 cup cottage cheese in bottom of 16 oz parfait cup; add 3 Tbsp yogurt mixture.
  3. Include 1/4 cup each of zucchini, yellow squash, green beans; add 2 Tbsp of tomatoes and carrots.
  4. Place 1/4 cup Savory Granola in separate cup on top of parfait cup to retain freshness; cover and store refrigerated.
