Batter
  1. Prepare cake batter according to package directions, adding red food coloring to step 1.
  2. Deposit 2 lb 14 oz cake batter into each of 3 greased or parchment-lined sheet pans and spread evenly.
  3. Bake as directed below; allow cake to cool completely and freeze before assembly.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
White Mousse
  1. Melt white vanilla baking chips over double boiler on low heat, stirring frequently then remove from heat.
  2. Whisk cream on high speed until peaks form, approx. 2-3 minutes.
  3. Fold whipped cream into white chips slowly until fully incorporated.
Ganache
  1. Heat cream and butter in medium saucepan to boiling, stirring constantly.
  2. Add hot cream to chocolate chips in medium bowl.
  3. Cover bowl and let stand 5 minutes then stir mixture briskly until smooth.
Assembly
  1. Invert 1st red velvet sheet cake onto cardboard.
  2. Spread approx. 2 lb 8 oz white mousse evenly over cake.
  3. Invert 2nd sheet cake over mousse; repeat with spreading 2 lb 8 oz mousse.
  4. Invert 3rd sheet over mousse; repeat with remaining mousse.
  5. Chill in freezer approx. 20 minutes or until mousse is just set.
  6. Spread chocolate ganache evenly over top of mouse and keep cake refrigerated .
