Raspberry Rose Scuffins

These easy filled and folded scones combine tart raspberry filling and floral rose water for a bright and beautiful breakfast, brunch or teatime treat.

Prep
  1. Place frozen scones onto a parchment lined sheet pan and thaw covered, at room temperature 30-45 minutes or until flexible.
  2. Cut scone block at pre-scored lines into 12 individual scones.
Assembly
  1. Press dough out to a 1/4-inch thickness using hands or rolling pin.
  2. Place into a well-sprayed jumbo muffin pan then add 2 tsp raspberry filling.
  3. Fold ends of scone dough over filling, towards the center; very gently press seal.
  4. Bake as directed until scuffin springs back to the touch on the edge; allow to cool 5-10 minutes in pan, then remove and cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 11 minutes of baking.
Finishing
  1. Heat icing in microwavable bowl 15-30 second increments until melted, stirring in between.
  2. Stir in rose water; drizzle approx. 2 tsp over top of cooled scuffins.
  3. Sprinkle with 1/2 tsp pistachios and allow icing to set before serving.

  • Garnish with edible, dried rose pedals for an additional rose flavor and color if desired.
