Raspberry Peach Cobbler Mini Shots

Alternate layers of fabulous peach cobbler with tart and tangy raspberry sauce in little shot glasses.

Batter
  1. Pour peaches and liquid into greased, full steam table pan (12 x 20 x 2 1/2-inches).
  2. Sprinkle cake mix and cinnamon evenly over peaches.
  3. Drag spatula through cake mix, peaches and syrup mixture to lightly combine. DO NOT completely stir all together.
  4. Sprinkle brown sugar evenly over cake mix.
  5. Drizzle melted butter evenly over brown sugar.
  6. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 25 minutes of baking.
Assembly
  1. Place 0.5 oz raspberry sauce in bottom of 4 oz shot glass or disposable glassware.
  2. Deposit 3 oz prepared peach cobbler on top of raspberry sauce.
  3. Pipe a rosette (0.3 oz) of whipped topping on cobbler as a garnish; chill until ready to serve.

  • Tip: Cobbler can be garnished with fresh raspberries for added color.
