Raspberry and Chia Seed Pastry Tart

Make fan favorite pastry tarts in-house with minimal prep using Pillsbury™ Pie Dough, raspberry pie filling and chia seeds for an individual treat.

Prep
  1. Thaw pie dough, covered, at room temperature 15-30 minutes until flexible or refrigerate overnight.
  2. Whisk egg and water together in small bowl; set aside.
Filling
  1. Add pie filling and chia seeds to a mixing bowl; stir to combine.
Assembly
  1. Cut each pie sheet into 4 rectangles for a total of 12 pieces.
  2. Spread 1-#30 scoop of Filling evenly on each dough rectangle, allowing 1/2-inch border around edges.
  3. Brush border with egg wash, then fold long side of dough over to close.
  4. Crimp edges with fork to seal, bake as directed until golden brown; cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Finishing
  1. Heat icing in microwave-safe bowl, stirring in 10 second increments until thinned.
  2. Dip top of hand pie in icing and sprinkle with colored sugar.
  3. Allow icing to set before service.

  • Make in advance and glaze to order, or fully prepare and thaw for service.
  • Get creative with different filling/icing combinations to create the flavors of s'mores, strawberry rhubarb or apple cinnamon.
