Pumpkin Spice Cookies

Pumpkin and pumpkin spices are welcome additions to a sugar cookie. It's simple, but super!

INGREDIENT

Butter, unsalted, softened

Granulated sugar

Eggs, large

Pumpkin puree, canned
12 oz
1 1/2 cups
Pumpkin pie spice
3 Tbsp
  1. Beat butter and sugar in mixer bowl with paddle attachment on medium speed 2 minutes.
  2. Stop mixer, scrape bowl and paddle. Add eggs and pumpkin.
  3. Mix on low speed 1 minute. Stop mixer, scrape bowl and paddle.
  4. Add cake mix and pumpkin pie spice. Mix on low speed 1 minute.
  5. Deposit dough with #30 scoop in 4x6 pattern on greased or parchment-lined full sheet pan.
  6. Bake as directed below.
