Pumpkin Spice Cake with Cinnamon Apple Spiced Streusel

Cinnamon-spicy pumpkin loaf cakes are topped with an amazing brown sugar-oat streusel, and drizzled with a lovely icing.

Streusel Topping

Cake Batter

Water, cool approx. 72°F

Pumpkin puree, canned
1 lb 8.00 oz

Vanilla extract

Coriander, ground
2 tsp
Cinnamon, ground

Cloves, ground

Finishing

Streusel Topping
  1. Mix softened butter, 1 lb cake mix, brown sugar, oats and spices in mixer bowl using paddle attachment on low speed until crumbly, approx. 3 minutes.
  2. Set aside.
Batter
  1. Mix water, pumpkin, vanilla and spices in mixer bowl using paddle attachment on low speed 1 minute.
  2. Add cake mix. Mix on medium speed 2 minutes.
  3. Stop mixer, scrape bowl and paddle. Mix on low speed 30 seconds.
  4. Pour 1 lb 6 oz of batter into each of 6 well greased 9 x4 1/2 x 2 2/3-inch loaf pans.
  5. Sprinkle approx. 5 oz streusel topping evenly over batter in each loaf pan.
  6. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 22 minutes of baking.
Finishing
  1. Heat icing in microwave until free flowing. Stir in cinnamon.
  2. Drizzle approx. 2.5 oz icing evenly over each loaf when cool.
