Pumpkin Pecan Sandies

Crumbly shortbread cookies are bursting with pumpkin and pecans and drizzled with vanilla icing.

Butter, unsalted

Pecan pieces

Pumpkin puree, canned
1 lb
2 cups
Pumpkin pie spice
3 Tbsp
Dough
  1. Combine butter and cake mix in mixer bowl fitted with paddle attachment.
  2. Mix on low speed about 2 minutes or until well blended. Stop mixer, scrape bowl and paddle.
  3. Add pecans, pumpkin and pumpkin pie spice on low speed about 1 minute or until mixture is combined and forms a dough.
  4. Scoop dough using #30 scoop and place on greased or parchment-lined full sheet pans.
  5. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Finishing
  1. Heat vanilla icing in microwave until melted
