Pumpkin Gobs

Large, dome-shaped cookies are moist and soft, and filled with pumpkin flavors. Stacked with a second cookie -- with cream cheese frosting between -- the cookie is uniquely spherical.

Pumpkin Gob Batter

Batter
  1. Mix batter ingredients in mixer bowl with paddle attachment on low speed 2 minutes or until mixture is incorporated.
  2. Stop mixer, scrape bowl and paddle. Mix an additional 1 minute.
  3. Deposit using #20 scoop in 3x5 pattern onto greased or parchment-lined full sheet pan.
  4. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Finishing
  1. Pipe or spread 1 oz icing on flat side (bottom) of 1 Pumpkin Gob.
  2. Top with another Pumpkin Gob and press down gently.
