Pumpkin Cream Cheese Muffins

Whole grain pumpkin muffins are even more moist and palate-pleasing with rich cream cheese added to the batter.

  1. Add cream cheese to mixer bowl fitted with paddle attachment; mix on medium speed for approx. 1 minute until soft.
  2. Add pumpkin; mix on medium speed until incorporated.
  3. Add water, muffin mix and cinnamon; mix on low speed for 1 minute.
  4. Deposit #16 scoop of batter into greased or paper-lined muffin pans; add 1 tsp pepitas (pumpkin seeds) on top.
  5. Bake as directed below and allow to cool slightly before serving.
