Pumpkin Cinnamon Roll Bread Pudding

Use leftover cinnamon rolls and pumpkin puree for this simple, pumpkin pie flavored bread pudding!

Prep
  1. Cut baked cinnamon rolls into approx. 1/2 to 3/4-inch cubes.
  2. Combine cinnamon roll cubes, melted butter and pumpkin pie spice in large mixing bowl.
  3. Deposit into lightly sprayed 2-inch half steam table pan and set aside.
Assembly
  1. Whisk together milk, eggs, pumpkin puree, sugar, vanilla and salt in mixing bowl until well blended.
  2. Pour mixture through fine sieve then pour over cinnamon roll pieces.
  3. Bake as directed below until golden brown and set; serve warm.
