Pumpkin Chocolate Chip Walnut Cookies

Comfort food flavors -- pumpkin, vanilla and walnuts -- combine in a twist on chocolate chip cookies.

Pumpkin puree, canned

Pumpkin pie spice
1 1/2 Tbsp
Vanilla extract
1 Tbsp
Walnuts, chopped

Semi-sweet chocolate chips
1 lb
2 1/2 cups
  1. Mix butter and sugar in mixer bowl fitted with a paddle attachment on medium speed for 2 minutes.
  2. Stop mixer, scrape bowl and paddle. Add eggs and pumpkin.
  3. Mix on low speed for 1 minute. Stop mixer, scrape bowl and paddle.
  4. Add cake mix, pumpkin pie spice and vanilla extract. Mix on low speed for 1 minute.
  5. Add walnuts and chocolate chips and mix on low speed for 20 seconds.
  6. Deposit dough using a #30 scoop in a 4x6 pattern on a parchment-lined full sheet pan and bake as directed below.
