Tres Leches Mixture
  1. Combine evaporated milk, sweetened condensed milk and cream in stainless steel bowl.
  2. Mix thoroughly; cover and refrigerate until needed.
Batter
  1. Pour water and pumpkin into mixing bowl; stir to blend.
  2. Add muffin mix, sugar, cinnamon and nutmeg; stir until batter is well-mixed and smooth.
  3. Deposit onto greased or parchment-lined full sheet pan; bake as directed below.
  4. Freeze baked bread 1 hour or overnight; cut into 1/2-inch cubes and set aside until needed.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Assembly
  1. Add #30 scoop butterscotch pudding in 10 oz disposable cup; add 2 oz pumpkin bread cubes and pour in 2 oz Tres Leches mixture
  2. Place whipped topping in pastry bag fitted with star tip; pipe approx. 1 oz on top.
  3. Cover parfait and chill until ready to serve.
