Pound Cake

A few additions to muffin mix, and you've got easy, luscious, fine-textured loaf cakes.

Water, cool approx. 72°F
1 lb 12.00 oz
3 1/2 cups
Granulated sugar
1 lb
2 cups
Eggs, large
10 oz
5 each
Vegetable shortening
10 oz
1 1/4 cups
Vanilla extract
1 Tbsp
  1. Pour half of the water and remaining ingredients into mixer bowl fitted with paddle attachment.
  2. Mix on medium speed 2 minutes; add remaining water gradually on low speed.
  3. Stop mixer, scrape bowl and paddle; mix on low speed 1 minute.
  4. Deposit 1 lb 7 oz batter into each of 6 (4 1/2 x 9 x 2 3/4-inch) greased loaf pans.
  5. Bake as directed below and allow to cool.
