Pineapple Whole Grain-Rich Coffee Cake

Add sweet, tangy pineapple to a whole-grain coffee cake with ginger and nutmeg. What a great way to start the morning!

Batter
  1. Pour reserved pineapple juice into mixing bow; add muffin mix and spices.
  2. Mix using rubber spatula until blended; fold crushed pineapple into batter. DO NOT overmix.
  3. Deposit 4 lb 8 oz batter per pan into each of 2, greased, 12x20x2 1/2-inch hotel pans.
  4. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Finishing
  1. Allow cake to cool before cutting into 4x4 pattern; serve warm or at room temperature.
  2. Dust each piece with powdered sugar just before serving.
