Batter
Pour half of the water and all of the extract into mixer bowl fitted with paddle attachment.
Add cake mix and mix on medium speed 2 minutes.
Add remaining water gradually while mixing on low speed, stop mixer, scrape bowl and paddle.
Mix batter on low speed an additional 2 minutes. DO NOT OVERMIX.
Pat pineapple dry; fold in pineapple and coconut.
Deposit batter into greased and parchment-lined full sheet pan with pan extenders.
Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Icing
Place icing and rum extract into mixer bowl fitted with paddle attachment.
Add powdered sugar and mix on low speed 2 minutes.
Stop mixer, scrape bowl and paddle; mix on low speed additional 2 minutes.
Set aside.
Finishing
Use 2 lb 10 oz of Icing for cake and place remainder in piping bag.
Pipe a rosette (approx. 0.75 oz) using a star tip onto each portion.
Garnish with pineapple chunk, a cherry and a sprinkle of coconut for serving.
