Tamale Coating

Water, cold approx. 50°F

Garlic Powder

Filling
  1. Mix all ingredients in a bowl until completely blended together.
  2. Sauté meat filling in a pan over medium-high heat until ground beef is completely cooked through.
  3. Set filling aside and allow to cool and refrigerate until ready to assemble.
Tamale Coating
  1. Mix corn muffin mix according to package instructions.
  2. Fold in cumin, garlic powder, and salt; whisk until combined.
Assembly
  1. Pipe approx. 0.75 oz of batter in a 2.5-inch circle for the tamale base, in a 3x4 configuration, on a greased or parchment-lined full sheet pan.
  2. Deposit meat filling using a #40 scoop in the center of each tamale base.
  3. Pipe out approx. 1.25 oz of batter on top of each filling scoop to cover.
  4. Bake as directed below.
