Peanutty Chocolate Cake Pops

Devil's food cake pops get covered with peanut butter icing to create the beloved favorite combination and provide a small bite sweet treat.

Batter
  1. Prepare cake according to package directions for half sheet.
  2. Bake as directed; allow cake to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Assembly
  1. Crumble 1 lb of cooled cake into mixer bowl; freeze remaining cake for a later use. 
  2. Add chocolate fudge icing and mix on medium speed using paddle attachment until completely combined, approx. 2 minutes. 
  3. Use #40 scoop and round each portion; insert lollipop stick 1/2-3/4 of the way into cake ball. 
  4. Place on parchment-lined sheet pan to set and freeze until firm, approx. 1-2 hours.
Finishing
  1. Combine icing and peanut butter in microwave bowl; heat in 10 second intervals until melted. Do not overheat. 
  2. Dip each cake pop into melted icing; hold over bowl to excess icing to flow off.
  3. Sprinkle with chopped nuts and Insert cake pops, standing upright, into a Styrofoam board or place on parchment-lined pan and allow to set.

  • Change up the garnish by drizzling melted chocolate icing over peanut butter icing prior to sprinkling on peanuts.

  • Create truffles by skipping the lollipop stick and using 2 forks to dip into melted icing.
