Oatmeal Raisin Pancakes with Cinnamon Sour Cream

The flavors of an oatmeal-raisin cookie are amazingly delicious in a simple pancake topped with a dollop of cinnamon-scented sour cream.

Cinnamon Sour Cream
  1. Mix sour cream, sugar and cinnamon in mixing bowl using whisk until blended and smooth.
  2. Refrigerate until needed.
  1. Mix water, brown sugar and raisins in mixing bowl; add pancake mix.
  2. Whisk until batter is blended and smooth; fold in oats.
  3. Deposit 2 oz batter onto lightly greased 375°F griddle; spread batter into 4-inch diameter gently with back of ladle if needed.
  4. Cook 2 minutes on each side or until puffed and edges begin to dry.
  5. Top each pancake with 1 Tbsp Cinnamon Sour Cream.
