Oatmeal Raisin Bread

Honey and oats are worked into the yeast dough along with raisins and walnuts for mouthwatering, round loaves.

Oats and Honey Mixture

Active dry yeast packets - included in box

Walnuts, chopped

Raisins

Cinnamon, ground

Oats and Honey Mixture
  1. Heat water to boiling in saucepan.
  2. Add oats and reduce heat; simmer 3 minutes.
  3. Remove from heat, stir in honey and set aside to cool.
Assembly
  1. Prepare roll mix in mixer bowl as directed on package, adding cooled cooked oats at the same time as the mix.
  2. Add walnuts, raisins and cinnamon during last minute of mixing.
  3. Cover dough and allow to sit 20-30 minutes.
  4. Divide dough into 6 - 1 lb 8 oz pieces.
  5. Round the loaves on floured surface and place on 2 parchment-lined full sheet pans.
  6. Proof until doubled in size, approx. 30-45 minutes and bake as directed below.
