Crunchy corn chips and cheese top salsa-filled corn muffins in a nacho-flavored snack.

Batter
  1. Combine water, salsa and muffin mix in large mixing bowl. DO NOT OVERMIX.
  2. Fold in cheese until incorporated.
  3. Deposit #30 scoop of batter into greased or paper-lined mini muffin pans.
  4. Bake as directed below and allow to cool 5 minutes before removing from pan.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Pipe approx. 1/2 tsp of prepared cheese sauce inside warm muffins.
  2. Drizzle 1/2 tsp cheese sauce on top and gently press on 1 tsp crushed corn chips; serve immediately.
