No-Bake Peanut Coconut Drop Cookies

Corn flakes and coconut get a sweet, peanut butter coating in a chewy and crunchy treat.

Light corn syrup

Granulated sugar

Butter, unsalted

1/2 cup
Peanut butter, creamy
2 lb

Shredded coconut
8 oz

  1. Grease or spray large mixing bowl. Mix coconut and cereal in the bowl. Set aside.
  2. Mix corn syrup, sugar and butter in heavy-bottom 14-quart saucepan.
  3. Heat to boiling, stirring constantly. Boil 2 minutes.
  4. Add peanut butter; stir until melted and mixture is smooth.
  5. Remove from heat; cool 5 minutes. Add melted peanut butter mixture to cereal mixture, and mix well to coat.
  6. Scoop mixture using #40 scoop and place on 2 lightly greased parchment-lined full sheet pans.
  7. Cool at room temperature before serving.
