Prep
  1. Thaw puff pastry dough squares, covered, at room temperature 15-30 minutes until flexible or refrigerate overnight.
  2. Whisk egg and water together in small bowl; set aside.
Assembly
  1. Dock puff pastry dough and brush egg wash along edges.
  2. Combine onions, peppers and salt in large mixing bowl; spread 2 oz of mixture in center of each dough square.
  3. Add 1 cooked sausage link diagonally on square; overlap the 2 open corners of dough over sausage.
  4. Pinch to seal and place seam-side down on parchment-lined full sheet pan.
  5. Bake as directed below until flaky and golden brown; serve warm.
