Morning Glory Muffin Tops

Caramel coloring

Cinnamon, ground

Carrots, fresh, grated

Apples, fresh, peeled, diced

Shredded coconut

Prep
  1. Toast walnut pieces in 350°F oven for 5-7 minutes or until light brown; set aside to cool.
  2. Rehydrate raisins in water for 5 minutes; drain and set aside.
Batter
  1. Combine water and caramel color in large mixing bowl; add muffin mix and cinnamon and stir until batter is smooth.
  2. Fold in remaining ingredients; deposit #20 scoop of batter on greased or paper-lined full sheet pans, 15 per pan.
  3. Bake as directed below and allow to cool before serving.
