Cinnamon Whipped Cream
  1. Add cream, sugar and cinnamon in mixer bowl with whisk attachment.
  2. Whisk on medium speed approx. 4-6 minutes and refrigerate until needed.
Pancakes
  1. Mix coffee and pancake mix in mixing bowl using whisk until batter is blended and smooth.
  2. Deposit 2 oz batter onto lightly greased 375°F griddle; cook 1 1/2 minutes on each side or until puffed and edges begin to dry.
  3. Serve each pancake with 1 Tbsp Cinnamon Whipped Cream and 1 Tbsp of chocolate shavings.
