Mint Chocolate Chip Cupcakes

Refreshing mint joins decadent chocolate in devil's food cupcakes with minty icing. Mini chocolate chips add a crunch on top.

Batter
  1. Prepare batter according to package directions, adding mint extract in step 1.
  2. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Finishing
  1. Combine icing, food coloring and mint extract in large mixing bowl.
  2. Pipe 0.75 oz of icing mixture (using large tip) over each cupcake; sprinkle chocolate chips evenly over top and serve.
