Egg Wash
  1. Beat egg and water in mixing bowl with whisk until blended. Set aside.
Dough
  1. Add water to mixing bowl. Add remaining scone ingredients, and mix using rubber spatula approx. 30 strokes or until soft dough forms. Do not overmix.
  2. Place dough on work surface lightly sprinkled with flour.
  3. Roll dough into 3/4-inch thick rectangle, approx. 15x18 inches. Use biscuit rails to assist in rolling out to correct size.
  4. Brush top of dough with egg wash. Sprinkle with toppings.
  5. Divide dough into (8) 2-inch long strips. Divide each strip into 8 individual scones, approx. 2x3-inches each.
  6. Place on greased or parchment-lined full sheet pans in 4x6 pattern bake as directed below.
