Pita Bread
  1. Add yeast and water to mixer bowl fitted with dough hook; mix on low speed for 30 seconds.
  2. Add flour, olive oil and salt; mix on low speed for 5 minutes (dough will be slightly sticky).
  3. Place dough on lightly floured bench, cover and allow to rest until doubled in size (approx. 1 hour).
  4. Divide dough into 3 oz dough balls then roll into 7-inch circles.
  5. Drizzle cast iron pan (medium heat) or flat top (375°F) with oil; place dough and cook 2-3 minutes per side until golden brown.
Chicken
  1. Evenly coat chicken breasts with oil, salt and pepper.
  2. Sauté in pre-heated cast iron pan for 5 minutes on each side until internal temperature reaches 165°F.
  3. Cool for service.
Roasted Vegetables
  1. Evenly coat vegetables with oil, salt and pepper; place on parchment-lined sheet pan. (Do not overcrowd.)
  2. Bake as directed until slightly charred; cool for service.

Assembly
  1. Place Pita Bread down and layer on chicken breast (split in half if too thick).
  2. Add 2 leaves of romaine, 1/8 cup Roasted Vegetables, 2 slices fresh mozzarella and 3 basil leaves.
  3. Drizzle on 1 Tbsp balsamic reduction and wrap in deli paper for service.
