Matcha Swirl Trifle

This dessert with tiny squares of matcha green tea swirled cake cubes is a great treat.

Batter
  1. Pour water and cake mix into GREASE-FREE mixer bowl with whisk attachment; mix on low speed 30 seconds.
  2. Stop mixer, scrape bowl and whisk; mix on medium speed for 1 minute or until light/fluffy and holds a crease.
  3. Remove 1 1/2 cups batter; gently stir in matcha green tea powder until combined.
  4. Spread plain batter into parchment-lined half sheet pan; drop tablespoons of matcha batter randomly then marble the batters together.
  5. Bake as directed and allow to cool completely then freeze for 1 hour for easiest slicing.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Assembly
  1. Slice cake into a 12x16 pattern to create 192 small cubes.
  2. Place 2, #40 scoops of Filling mixture in the bottom of a 12 oz glass.
  3. Press 4 matcha swirl cake cubes against the sides of the glass; arrange 1/4 cup pineapple chunks into the spaces.
  4. Place 1/4 cup strawberry slices into spaces so fruit is visible through the glass.
  5. Add 2, #40 scoops of Filling mixture on top of fruit and spread evenly; top with 4 more matcha swirl cake cubes.
  6. Refrigerate until service then garnish with 2 strawberry halves and serve.

  • Wipe knife clean with damp cloth after making each slice in the cake for cleaner edges.
  • Make in smaller portions for buffet desserts too.
