Matcha Green Tea Cakes

Subtle matcha tea added to a Gold Medal™ White Cake Mix with Greek yogurt yields lovely, delicate cupcakes.

Matcha green tea powder

Batter
  1. Place yogurt and 2 1/2 cups of water into mixer bowl fitted with paddle attachment.
  2. Add cake mix and Matcha tea powder; mix on medium speed 2 minutes.
  3. Add remaining water slowly while mixing on low speed.
  4. Stop mixer and scrape bowl; mix on low speed an additional 2 minutes.
  5. Deposit batter using #20 scoop into paper-lined standard muffin pans.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Icing
  1. Heat icing in microwave until melted. Stir in lemon zest and thoroughly combine.
  2. Dip tops of cooled cupcakes into melted icing, and serve.
