Maple Glazed Cranberry Loaves

Cranberry-orange quick bread with a buttery maple topping is melt-in-your-mouth delicious.

Cranberry Loaf

Maple Glaze

Butter, unsalted

Powdered sugar

Light corn syrup
2 oz
1/4 cup
Maple extract
1 Tbsp
  1. Pour water into mixer bowl fitted with paddle attachment.
  2. Add muffin mix, and mix on low speed 30 seconds; stop mixer, scrape bowl and paddle.
  3. Add cranberries and orange zest; mix until combined.
  4. Deposit 4 - #10 scoops of batter into greased loaf pans.
  5. Bake as directed below and allow loaves to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Glaze
  1. Melt butter in saucepan over medium heat.
  2. Add powdered sugar, corn syrup and maple extract; stir mixture constantly until it comes to a boil.
  3. Remove from heat and allow to cool slightly; drizzle 2 oz over each loaf.
  4. Allow glaze to set and slice each loaf into 7 portions.
