Lemon Shortbread Bars

Tender, crumbly bars with lemon juice and zest are topped with a drizzle of vanilla icing.

Dough
  1. Combine cake mix, butter, extract, juice and zest in mixer bowl fitted with paddle attachment.
  2. Mix on medium speed for 2 minutes or until well blended.
  3. Deposit dough onto greased or parchment-lined full sheet pan and press to evenly distribute.
  4. Cover with additional piece of parchment and use a rolling pin to distribute evenly.
  5. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Finishing
  1. Mix icing and food coloring until well blended.
  2. Heat icing in microwave until melted.
  3. Drizzle over cooled bars before cutting and serving.
