Lemon Cookies

Buttery lemon cookies start with a white cake mix.

Water, cool approx. 72°F

Granulated sugar

Lemon rappe

Lemon compound

1/4 cup
  1. Mix butter in mixer bowl with paddle attachment on high speed until soft and fluffy, about 1 minute.
  2. Add eggs and water slowly to the butter while mixing on low speed.
  3. Add white cake mix and mix 1 minute on low speed. Stop mixer, scrape bowl and paddle.
  4. Add sugar, lemon rappe and lemon compound. Mix on low speed until all ingredients are incorporated, 1 to 2 minutes.
  5. Deposit dough using #70 scoop in 7x5 pattern onto greased or parchment-lined sheet pan and bake as directed below.
