Liquid eggs, pasteurized

Water, cool approx. 72°F

Granulated sugar

Lemon extract

Lemon zest

  1. Add butter to bowl of mixer with paddle attachment and mix on high speed until soft and fluffy, about 1 minute.
  2. Add eggs and water slowly while mixing on low speed.
  3. Add cake mix; mix for 1 minute on low speed.
  4. Stop mixer and scrape bowl and paddle; add sugar, lemon extract and lemon zest.
  5. Mix on low speed 1-2 minutes until all ingredients are incorporated.
  6. Deposit dough using #40 scoop in 5 x 4 pattern onto greased or parchment-lined sheet pan.
  7. Bake as directed below and cool slightly before serving.

  • CCP: Thaw and hold pasteurized liquid eggs under refrigeration <40°F until ready to prepare. CCP: Store unused portions covered and discard after 2 days.
