Kentucky Quesadilla

Flattened Pillsbury™ Southern Style Easy Split™ Biscuit Dough is filled with a pimento cheese spread to bring a Southern twist to a South-of-the-Border favorite.

Mayonnaise, light

Red onion, finely diced

Sharp cheddar cheese, shredded

Red bell peppers, roasted, peeled and diced

Prep
  1. Thaw biscuit dough covered, either at room temp. 15-30 minutes until flexible or refrigerated overnight.
  2. Place thawed biscuit dough on parchment-lined full sheet pan.
  3. Grease another piece of parchment and place over biscuits.
  4. Place an additional sheet pan on top (to cause biscuits to spread out rather than rise while baking); bake as directed below and keep warm.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Pimento Cheese Filling
  1. Combine yogurt and mayonnaise in large bowl; mix well.
  2. Add onion, garlic powder and black pepper; mix completely.
  3. Fold in shredded cheese and red pepper; chill until needed.
Assembly
  1. Split open warm biscuit and fill with #20 scoop Pimento Cheese Filling.
  2. Cut into quarters and serve immediately.

  • Serve with a Country Ham Brunch Salad to make it a meal (spinach, ham, cucumbers, tomatoes, eggs, asparagus, red onions with a balsamic vinaigrette). Note nutrition information will change.
