Jumbo Orange Angel Food Cupcakes

Angel food cupcakes get a bonus from orange gelatin -- a citrusy flavor and beautiful color. Cream cheese frosting and a sprinkle of toasted coconut finish the extra-large cakes.

Orange flavored gelatin powder

Cream cheese, softened

Toasting Coconut
  1. Place coconut on parchment-lined full sheet pan.
  2. Bake at 350°F for 3-4 minutes; stir and bake an additional 2-3 minutes or until lightly browned.
  3. Allow to cool and set aside until needed.
Batter
  1. Follow package directions for making angel food cake batter, adding gelatin powder in step 1 with the water.
  2. Deposit #12 scoop of batter into paper-lined jumbo muffin pans. (DO NOT use cooking spray).
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Icing
  1. Add cream cheese to mixer bowl fitted with paddle attachment; mix on high for 3 minutes.
  2. Add vanilla icing and mix on medium speed for 2 minutes or until well combined.
Finishing
  1. Pipe 1.5 oz of icing mixture (using star tip) on each cooled cupcake.
  2. Sprinkle on approx. 1 tsp toasted coconut and serve.

  • Cupcakes containing cream cheese icing need to be held under refrigeration.
