IPA Cheese Fondue Bites

Cheddar garlic biscuits with a gooey ham and cheese filling creates an irresistible, pop-able appetizer!

Water, cool approx. 72°F

Emmental cheese, shredded

Fontina cheese, shredded

Garlic, fresh, pureed

White pepper, ground

Diced ham, medium

Prep
  1. Thaw biscuits, covered, either at room temp. 15-30 minutes until flexible or refrigerate overnight.
Filling
  1. Cook beer in heavy-bottomed sauce pan on low heat until reduced to 1/3 of starting amount.
  2. Stir water and cornstarch together in separate bowl; pour slowly into beer while stirring with whisk.
  3. Bring to a boil and hold for 2 minutes; add heavy whipping cream.
  4. Simmer, stirring frequently, until reduced by half or sauce slowly drips from back of spoon.
  5. Remove from stove and stir in cheeses, garlic, salt and pepper; transfer mixture to blender.
  6. Blend for approx. 20 seconds, stop and scrape sides; blend for an additional 20 seconds or until smooth.
  7. Transfer to separate container if desired and stir in diced ham.
  8. Cover and refrigerate until completely cold and is firm.
Assembly
  1. Cut each thawed biscuit in half; roll each piece out to approx. 3 1/2-inch circle.
  2. Scoop 0.5 oz cold filling with #70 scoop; place in center of each biscuit round.
  3. Pinch biscuit closed around filling, making sure no openings remain; refrigerate for 30 minutes.
  4. Preheat fryer to 350°F; place balls in fryer basket and top with additional basket so they do not float.
  5. Fry for approx. 2 1/2 minutes or until golden brown; serve warm.

  • Tip: Serve with stone ground mustard for dipping if desired. Note, nutrition information may change.
