Potatoes
  1. Cover 1/4-inch diced potatoes in large pot with water; add 1 tsp salt and boil for 10 minutes or until fork tender.
  2. Drain water from potatoes, return to pan and set aside for assembly.
Filling
  1. Heat vegetable oil in large skillet over medium-high heat; add onions, jalapeños, ginger, curry, Garam Masala, turmeric and garlic.
  2. Cook until spices are fragrant and onions are translucent; add potatoes, peas, lemon juice and salt.
  3. Reduce heat to low; stir to combine and cook until heated through, approx. 3-5 minutes.
  4. Remove from heat; stir in cilantro and allow to cool completely.
Assembly
  1. Thaw biscuit pucks covered at room temperature for 30 minutes, or overnight in refrigerator.
  2. Roll dough on floured surface into a 7-inch by 5-inch oval; cut in half widthwise.
  3. Wet 1 cut side of dough with water; form a cone shape by picking up cut side corners and overlapping slightly.
  4. Press together to seal; place cone in hand, letting remaining flaps rest over your fingers so the cone is open.
  5. Deposit #40 scoop (0.75 oz) filling into cone; wet remaining inside of flaps with water.
  6. Pinch dough together to create triangle shape and press to seal; repeat for remaining dough.
  7. Drop samosas into preheated 350°F fryer for 3 minutes; fully submerge until nicely browned and cooked through.

  • Tip: Serve with mint chutney if desired.
