Batter
  1. Pulse 6 cups Honey Nut Cheerios cereal in food processor 4-5 times until chopped small; set aside.
  2. Stir together water and muffin mix in large mixing bowl until thoroughly combined.
  3. Fold in yogurt and Honey Nut Cheerios crumbs until incorporated. DO NOT OVERMIX.
  4. Deposit batter using #10 scoop into generously sprayed or paper-lined standard muffin cups; bake as directed below and cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Finishing
  1. Garnish each muffin with approx. 1 Tbsp yogurt, approx. 1 Tbsp lemon filling and approx. 1 Tbsp whole Honey Nut Cheerios.
  2. Sprinkle on lemon zest and hold refrigerated for service.
