Hawaiian Bread Pudding with Rum Sauce

Pour a rich custard over flaky cubes of baked biscuits with pineapple, coconut and almonds for a new twist on a classic dessert.

Rum Sauce

Brown sugar, packed

Butter, unsalted, melted

Heavy cream
2 Tbsp
Rum
4 Tbsp
Toasted Coconut
  1. Spread coconut evenly onto half sheet pan; toast in 350°F oven for 2-3 minutes until golden brown.
  2. Cool until needed.
Assembly
  1. Cut baked biscuits into approx. 1/2-3/4-inch cubes; add to large mixing bowl.
  2. Heat milk in saucepan over medium heat until hot; keep warm.
  3. Add butter, cinnamon, pineapple, pineapple juice, almonds and toasted coconut to large mixing bowl; stir until evenly mixed.
  4. Spray one full 2-inch steam table pan and deposit biscuit mixture into pan.
  5. Combine eggs, sugar, vanilla and salt in separate mixing bowl; mix with wire whisk until well blended.
  6. Add heated milk slowly to egg mixture and mix well.
  7. Pour over cubed biscuits; allow to rest 30-35 minutes before baking.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Rum Sauce
  1. Stir together brown sugar, butter, whipping cream and rum in medium sauce pan.
  2. Heat to boiling over high heat; continue boiling for 3-4 minutes, stirring constantly until slightly thickened.
  3. Keep warm until serving.
Finishing
  1. Cut bread pudding into 32 - 2 x 3-inch pieces.
  2. Spoon 1 Tbsp Rum Sauce over each portion and serve immediately.
