Harvest Pumpkin Streusel Coffee Cake

A dense pumpkin cake with raisins pairs perfectly with a crumbly pecan streusel.

Pumpkin puree, canned

Pumpkin pie spice

Raisins, soaked, drained

Topping
  1. Place all ingredients in mixing bowl fitted with whisk attachment.
  2. Mix on low speed approx. 1 minute or until well blended; set aside.
Batter
  1. Combine water, pumpkin and pumpkin pie spice in mixer bowl fitted with paddle attachment.
  2. Add coffee cake mix and mix on low speed 2 minutes.
  3. Stop mixer, scrape bowl and paddle; mix on low speed 1 minute until batter is smooth.
  4. Fold in raisins; deposit batter into greased and parchment-lined full sheet pan.
  5. Spread batter evenly and sprinkle crumb topping on top.
  6. Bake as directed below and allow to cool before portioning.
