Harvest Apple Spice Cake

In a rich, sour cream spice sheet cake, orange zest and extract complements the apples along with cinnamon, cloves and cardamom.

Batter
  1. Follow cake package directions for preparing, adding half of total liquid, the chopped apples, sour cream, spices and orange zest in the first stage of mixing.
  2. Pour total batter into greased and parchment-lined full sheet pan using a pan extender (if pan extenders are not available, use 7 lb 8 oz batter per sheet pan).
  3. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
Finishing
  1. Place icing ingredients into mixing bowl fitted with paddle attachment.
  2. Mix on low speed 2 minutes; stop mixer, scrape bowl and paddle.
  3. Mix on low speed 2 additional minutes and spread on completely cooled cake.
