Prep
  1. Thaw doughball by spraying it with pan spray, then place it in a dough bin, covered, under refrigeration overnight.
Assembly
  1. Dust doughball and work surface with flour; roll out to approx.12x12-inches.
  2. Re-dust dough with flour as needed so it is not sticky; begin to gently stretch to 20x22-inch trimming off any excess to create a rectangle. (Stretch on tablecloth if desired to make folding easier.)
  3. Brush melted, 1/2 cup clarified butter unevenly over dough so it is spotty. 
  4. Add corn muffin batter, cream cheese filling, and jam to separate pastry bags; cut to have a 1/4-inch diameter flow.
  5. Starting 1-inch in from short edge and 2-inches in from long edge, pipe 3-4 lines of corn muffin batter, ending 1-inch short from other short edge.
  6. Pipe cream cheese filling evenly on top of the corn muffin batter, followed by the jam.
  7. Fold the 2-inch, long edge side over top of the fillings then slowly roll up dough (use tablecloth to assist if desired).
  8. Press seam ends down firmly to seal, and trim 1/2-inch from each end; transfer to parchment-lined sheet pan.
  9. Brush the strudel with 1 Tbsp melted, clarified butter; poke 2 rows of 16 holes with a toothpick to vent.
  10. Bake until golden brown as directed, cool slightly and cut into 2-inch pieces for serving.
