Greek Vanilla Yogurt with Coffee Compote Sundae

Special mornings deserve a parfait: vanilla yogurt with a fabulously flavored sauce of coffee, figs, honey, cinnamon and more. Wow!

INGREDIENT

Coffee, brewed
2 lb 8.00 oz
5 cups
Dried figs, stemmed, quartered
1 lb 7.00 oz
4 cups
Honey
9 oz
3/4 cup
Star anise pods
4 each
Cinnamon, ground
1 tsp
Orange zest
1 1/3 Tbsp
Cocoa Powder
1 1/3 Tbsp
Coffee Compote
  1. Add coffee, figs, honey, star anise, cinnamon and orange zest to a medium-heavy sauce pan.
  2. Stir and bring to a boil over high heat. Reduce heat and simmer, covered for 10 minutes.
  3. Remove figs with a slotted spoon and whisk the cocoa powder into the sauce.
  4. Simmer the liquid, uncovered, over medium-high heat until reduced and of syrup consistency about 5-10 minutes.
  5. Remove star anise and discard. Add the figs back to the syrup and stir to coat.
  6. Let cool completely before assembly.
Assembly
  1. Deposit 1/2 cup (4 oz) of yogurt into each of 16 serving dishes and top with 1/4 cup (approx. 2.5 - 3 oz) of Coffee Compote.
  2. Serve immediately or hold under refrigeration until ready to serve.
