Grasshopper Brownies

A dessert spin on the classic cocktail, these Grasshopper Brownies start with our fudgy Pillsbury™ Fully Baked Brownie Sheet, covered in crème de menthe buttercream, followed by a classic and crunchy chocolate ganache layer.

Buttercream Icing

Crème de mint baking chips

Buttercream Icing
  1. Add butter and cream cheese to a mixer bowl fitted with paddle attachment; mix on medium speed until smooth.
  2. Add crème de menthe liqueur, peppermint extract and salt; mix on medium speed until thoroughly combined.
  3. Decrease mixer speed to low and slowly add in powdered sugar; increase speed and mix until smooth.
Assembly
  1. Invert frozen brownie sheet and remove parchment paper; spread on Buttercream Icing evenly.
  2. Refrigerate until cold and firm, approx. 60 minutes.
Ganache
  1. Add chocolate chips, cream, butter and salt to a heat-safe bowl; set over a pan of simmering water.
  2. Warm the mixture, stirring occasionally until it is melted and smooth.
Finishing
  1. Pour melted Ganache over cold Buttercream Icing layer; smooth with an offset spatula.
  2. Sprinkle on crème de menthe baking chips before Ganache sets.
  3. Chill approx. 60 minutes to set and keep refrigerated until service.

  • Substitute Crème de menthe syurp for liqueur if desired.
