Granny Smith Apple Fritters

Apple pastries deep fried until they are light brown are simply irresistible. This method gets you there simply and clearly, with amazing results.

Batter

Baking powder

Egg, large

1 each
Buttermilk
8 oz
1 cup
Butter, unsalted, melted
2 oz
1/4 cup
Apple juice
2 oz
1/4 cup
Vanilla extract
1 tsp
Granny Smith apples, fresh, small diced
9 oz
2 cups
Finishing
INGREDIENT

Granulated sugar
4 oz
1/2 cup
Cinnamon, ground
1/2 tsp
Batter
  1. Mix flour, salt and baking powder in mixing bowl.
  2. Mix eggs, buttermilk, butter, apple juice and vanilla in separate mixing bowl
  3. Add wet mixture into flour mixture; stir until well blended then fold in diced apples.
  4. Drop #40 scoop of batter into preheat (to 350°F) frying shortening. Do not overfill fryer.
  5. Fry approx. 3-4 minutes, turning with tongs until evenly golden brown on all sides.
  6. Place fritters on cooling rack and allow excess oil to drain.
Finishing
  1. Mix sugar and cinnamon together in small mixing bowl.
  2. Immediately toss fried fritters in cinnamon sugar mixture to coat.
